Ingredients
Gluten Free Flour Blend (White Rice Flour, Whole Grain Brown Rice Flour, Sorghum Flour, Potato Starch, Tapioca Flour, Xanthan Gum), Sugar, Brown Sugar, Beetroot, Baking Powder (Monocalcium Phosphate, Sodium Bicarbonate, Non-GMO Cornstarch), Vanilla Powder (Dextrose, Vanilla Beans), Salt, Sodium Bicarbonate, Cocoa Powder

How To Make It
Makes 12 cupcakes, 36 minis, or one 8" or 9" round cake.
YOU WILL NEED
- Flavorless oil of choice, 4 tablespoons
- Milk of choice, 1/2 cup
- Eggs, 2 large
FOR VEGAN PREPARATION
- Flavorless oil of choice, 4 tablespoons
- Vegan milk of choice, 3/4 cup (we like almond, rice, or soy!)
DIRECTIONS
1. Preheat oven to 325F.
2. Empty mix into a medium bowl. Add oil, eggs (if using), and milk of choice.
3. Mix on low with an electric mixer for 2 minutes, scraping down the sides of the bowl after 1 minute.
4. Scoop into a cupcake pan with 12 paper liners, or a mini muffin tin with 36 mini liners.
5. Bake large cupcakes 16-20 minutes; mini cupcakes 7-12 minutes.
6. Test with a toothpick - little or no crumbs on the pick means done. Over-baking yields dry cupcakes.
7. Cool completely before frosting.
TO BAKE A CAKE INSTEAD
Follow the same instructions and use an 8" or 9" round pan. Grease the pan bottom, or line it with parchment to prevent sticking. Bake for 30 minutes, or until a toothpick comes out clean.
