Sugar, Gluten-Free Flour Blend (White Rice Flour, Brown Rice Flour, Sorghum Flour, Sweet White Rice Flour, Potato Starch, Tapioca Starch, Baking Soda, Xanthan Gum), Cocoa Powder, Sea Salt, Coffee

How To Make It
Makes 12 cupcakes, 36 minis, or one 8" or 9" round cake.
YOU WILL NEED
- Flavorless oil of choice, 4 tablespoons
- Milk of choice, 1/2 cup
- Hot water, 1/2 cup
FOR VEGAN PREPARATION
- Flavorless oil of choice, 4 tablespoons
- Vegan milk of choice, 1/2 cup (we like almond, rice, or soy!)
- Hot water, 1/2 cup
DIRECTIONS
1. Preheat oven to 350F.
2. Empty mix into a medium bowl. Add oil, hot water, and milk of choice.
3. Mix on low with an electric mixer for 2 minutes, scraping down the sides of the bowl after 1 minute.
4. Pour into a cupcake pan with 12 paper liners, or a mini muffin tin with 36 mini liners.
5. Bake large cupcakes 16-20 minutes; mini cupcakes 7-12 minutes.
6. Test with a toothpick - little or no crumbs on the pick means done. Over-baking yields dry cupcakes.
7. Cool completely before frosting.
TO BAKE A CAKE INSTEAD
Follow the same instructions and use an 8" or 9" round pan. Grease the pan bottom, or line it with parchment to prevent sticking. Bake for 30 minutes, or until a toothpick comes out clean.
